Se trata de una f\u00e1brica de verdad, en funcionamiento por lo que nos obligan a ponernos un traje protector para evitar la contaminaci\u00f3n. L\u00f3gicamente a la empresa han llegado congelados. Se trata de dos term\u00f3metros que miden la temperatura superficial y la que tienen en el el centro. Ronqueo es como se llama al despiece de los atunes. Cuando se trata de un at\u00fan rojo, entre la piel y el lomo hay una gruesa capa de grasa.<\/p>\n<p>Quitando la piel lo que queda es el lomo, un par de cortes y tenemos el lomo listo para vender en el mercado, para empaquetar o, como vamos a ver en este caso, para salar y convertir en mojama.
